Fruit and nut legume salad

Ingredients

Salad

  • 1/2 cup chickpeas
  • 1/2 cup red beans
  • 1/2 cup black beans
  • 1 apple
  • 1 red, green, or yellow pepper
  • 1/4 cup pistachios or walnuts
  • Feta cheese

Blueberry dressing

  • 1/4 cup frozen blueberries
  • 1/4 cup apple cider vinegar
  • 1 C. dijon mustard
  • 1/4 cup maple syrup
  • 1 cup of grapeseed or canola oil

Method

Salad

  1. Soak the legumes in water overnight
  2. Change the water of the legumes and cook
  3. Cut the apple and pepper, then put them in a bowl with the legumes, pistachios, and feta cheese
  4. Add dressing to taste

The salad will keep 2 to 3 days in the fridge

Blueberry dressing

  1. Defrost the blueberries beforehand
  2. Put all the dressing ingredients in a blender and mix

The vinaigrette will keep 2 to 3 weeks in the fridge
